Tim didn't think that was such a great idea. He's never seen My Big Fat Greek Wedding, though, so I will have to remedy that! Tim and I had chorizo sausage last night from Schacht Farms (with our Belgian waffles), and that's probably the best food item I have ever eaten. No joke. Who knew chorizo was the best thing ever??

So, tonight, we made breakfast burritos for dinner, and used ground chorizo sausage from Fischer Farms.

Huevos Rancheros is a classic Mexican breakfast dish. If you haven't ever had it, you need to.

To make:
Heat oil in a skillet and fry corn tortillas, about a minute on each side. Don't let them get browned. Set on plate.
Place beans (of any kind---can be refried beans) on the tortilla.
Fry an egg and place over beans.

I mainly blame Tolkien for this. So, I themed my bathroom around my "white tree" shower curtain and several photos from none other than my talented boyfriend.
